Lacking the earthiness traditionally associated with mushrooms, these develop a rich meaty quality when browned well. These mushrooms are great in stir fry, broth-based soups, egg dishes, sauteed alone, as the focal point of simple dishes, or for making vegan scallops, squid, or pulled pork.
